WINEMAKING.

The grapes are harvested at night in the first week of February from the SUR 8 and CERRO 12 plots. The chardonnay grows on a medium slope with clay loam soil, facing the Atlantic, while the viognier grows on a high slope with metamorphic rock soil, such as quartz and red slate.
We look for an early harvest point to maintain all the Atlantic character that the Cerro del Toro fruit gives us.
We grow the varietals separately in stainless steel tanks, and carry out a brief aging on their fine lees for 3 months, before defining the final blend.
