PINOT NOIR 2021.

Typical Pinot Noir, made with grapes from selected clones that ripen in the coldest part of the vineyard.
It was made with maceration at a controlled temperature, to preserve the fruity expression of the variety, and half of the wine was aged for a year in long-drying, lightly toasted French oak barrels.

WINEMAKING.
\
The grapes were harvested in February from the SUR 4 and SUR 7 plots (clone 667). In this sector of the slopes of Cerro del Toro, the soil has a silty loam texture, with the presence of calcium carbonate.
The harvest was carried out at night. Once the fruit entered the winery, the clusters were destemmed and the must underwent a pre-fermentative cold maceration for 48 hours. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts and after 8 days the pomace was pressed.
During maceration (at 24°C) two pump-overs and one daily stomping were carried out. Half of the wine was sent to long-drying French oak barrels (36 months), and remained there for 12 months.
Then, the wine was blended in the barrel with the rest that remained in stainless steel, to be bottled prior to verifying and gently filtering, so you can find natural sediments in the bottle.
